The Wait is Over: Hearthstone Kitchen & Cellar to Return to Red Rock Casino Resort & Spa Friday, Jan. 30

Clique Hospitality has announced the official opening date for the highly anticipated return of Hearthstone Kitchen & Cellar at Red Rock Casino Resort & Spa. Long regarded as “the hearth and soul of Summerlin,” the beloved neighborhood favorite will officially open to the public on Friday, Jan. 30, ushering in a new era for the restaurant that built a devoted following during its nearly decade-long run. Reservations for Hearthstone are now open and can be booked at HearthstoneLV.com.

Reclaiming its original 6,500-square-foot home, Hearthstone returns with a fully reimagined interior designed to feel both familiar and elevated. The refreshed space features a redesigned dining room, an expanded bar with classic bar games, and inviting lounge, creating a warm, versatile setting for everything from weeknight dinners to milestone celebrations.

“Hearthstone has always been more than a restaurant; it’s a gathering place,” said Andy Masi, founder of Clique Hospitality. “Bringing it back to Red Rock gives us the opportunity to reintroduce a concept people truly love, with a thoughtful evolution of the food, the space and the overall experience, while staying deeply rooted in what made Hearthstone special from the very beginning.”

At the helm of the kitchen is Executive Chef Jason Janson, whose career spans fine dining, high-volume operations and concept development. The menu will spotlight approachable, ingredient-driven cuisine with a refined touch, including handmade pastas, fresh seafood and pizzas. Signature starters will include roasted garlic hummus served with warm garlic naan and fresh vegetables; lollipop chicken wings served Buffalo-style; and tuna pizza topped with yellowfin tuna, sprigs of fresh cilantro, and drizzled with truffle aioli and olive oil. 

Featured entrées will include a roast prime rib of beef prepared on a rotisserie, served with au jus and creamed horseradish; pan-seared halibut with garlic, thyme, lemon, gremolata, and couscous; and bucatini carbonara made with guanciale, black pepper, and Parmesan, topped with a sunny-side-up egg. Wood-fired pizzas include prosciutto-and-arugula topped with mozzarella, parmesan, and aged balsamic; and the “Abe Froman,” topped with garlic sausage, mozzarella, and chili flakes. 

A signature bucket of fried chicken, available in original or hot honey, will be served with buttermilk biscuits, honey butter, house-made sauces, and coleslaw. A raw bar showcases fresh oysters, a ½ chilled Maine lobster tail, and more – with a weekly showcase of $1 Oyster Wednesdays.

In addition to the return of the restaurant’s impressive wine cellar and robust beer offerings, Hearthstone’s cocktails will be the toast of the town. Made with fresh ingredients, each libation will delight the palate, whether they’re made with spirits or ABV-free. Classics include a vodka or gin dirty martini made with olive brine and dry vermouth; a negroni made with Tanqueray gin, Campari and sweet vermouth; and a paloma made with Patron blanco tequila, grapefruit, lime, soda and sea salt. Signature cocktails include a spiced pear mule made with Weber Ranch vodka, peach puree, ginger beer and cinnamon; and the fireside smash made with Russell’s Reserve bourbon, fig preserves, thyme and lemon. Zero-proof cocktails include the crimson hearth, made with blood orange, lemon, and Fever-Tree ginger beer; and the red rock rumble, made with Almave blanco, lime, agave, and jalapeño, served in a glass rimmed with Tajin. 

Weekend brunch will feature a mix of indulgent and savory favorites, including almond brioche French toast, lemon curd pancakes, biscuits and gravy, classic and lobster Benedict, cacio e pepe carbonara pasta, and a shareable bagels-and-lox tower, complemented by $25 bottomless mimosas and bloody marys.

Janson’s experience includes time at the renowned Broadmoor Hotel in Colorado Springs, Colorado, Denver-based Atomic Provisions during a period of rapid growth, and more than two years at é by José Andrés. Most recently, Janson served as executive chef of Vetri Cucina Las Vegas under acclaimed chef Marc Vetri. At Hearthstone, he brings his expertise to create menus rooted in Americana with subtle Italian inspiration, crafted to feel both comforting and refined.
