Good Pie, the acclaimed Brooklyn-style pizza concept best known for its signature Grandma Pie, is set to celebrate the grand opening of its newest pizza shop inside the food court at Red Rock Casino Resort and Spa in Summerlin on Monday, May 11.
Marking the brand’s third Southern Nevada location, the new pizza shop introduces an elevated quick-service concept rooted in old New York traditions, artisan baking methods and premium ingredients, serving Good Pie’s beloved pizzas by the slice and as whole pies for both dine-in and takeout. The opening day celebration will take place from 11 a.m. to 4 p.m., with the first three guests in line receiving free pizza for a year, alongside ongoing raffle giveaways including $30 gift cards, a pizza party for 10 and exclusive swag, all creating an interactive and festive experience for the Summerlin debut.
Since opening its first location in Downtown Las Vegas in 2018, Good Pie has grown into one of Las Vegas’s most recognized pizza brands, earning multiple awards, appearances on Chopped and Food Paradise, and recognition from Dave Portnoy of Barstool Sports as one of the best pizzas in Las Vegas. At the heart of the menu is Good Pie’s signature Grandma-style pie, a tribute to generations of Italian American family traditions and time-honored recipes. Guests can also enjoy classic New York-style street slices, Brooklyn-style round pies, Sicilian and Detroit squares, and award-winning gluten-free and vegan offerings.

The new concept will pair a revolutionary conveyor belt oven system, engineered to cook every slice with consistency and precision across all styles, with an emphasis on post-oven finishing, elevating each slice with chef-driven touches such as the brand’s signature ricotta flowers, fresh burrata, hot honey and other curated toppings, all added after baking for maximum flavor and presentation.
The Summerlin location will also exclusively debut Good Pie’s newest creation, the White Pie Remix, available only at Red Rock Casino Resort and Spa. The new pie features more than seven cheeses, finished with red pepper flakes, lemon zest and olive oil, delivering a bold and elevated take on a white pizza.
Hours of operation will be Sunday through Thursday from 11 a.m. to 10 p.m. and Friday through Saturday from 11 a.m. to 11 p.m.
